Jairo Arcila is one of Colombia's most celebrated producers, running Santa Mónica farm in Huila with the kind of precision that shows up clearly in the cup. This Pink Bourbon goes through a 45-hour aerobic fermentation before a slow natural dry — a process that amplifies the fruit and builds the depth that makes this coffee so hard to put down. It came to us through the team at Cofinet, fourth-generation Colombian growers turned exporters who know this country's coffee better than just about anyone.
How to Drink It
This one rewards patience. Brew it as filter for a long, languid morning — or pull it as espresso for something more concentrated and theatrical. Either way, don't rush the finish. That's where the party is.
