Grown at 2,000 metres above sea level in the remote hills of San Antonio, Inzá, this single origin coffee is the product of two decades of dedication by María Rosa Oidor and her family. Los Nogales, meaning "the walnut trees," is a two-hectare farm carefully managed by María Rosa, who rises before dawn during the harvest to oversee every step — from hand-picking the ripest cherries to monitoring the drying and fermentation process. Her leadership and commitment to quality have helped elevate not just her own coffees, but the entire San Antonio community, where her family plays a vital role in supporting over 200 local producers.
This lot is 100% Pink Bourbon, a rare and sought-after variety known for its floral aroma, refined acidity, and layered sweetness. After harvesting, the cherries are processed using the traditional washed method, fermented for 36 hours, and then washed in clean mountain water. The result is a bright and complex cup, with notes that shine whether brewed as filter or as a vibrant, nuanced espresso at home. Grown in rich volcanic soil and ripened slowly due to the farm’s high elevation, the coffee expresses incredible clarity and depth — a true reflection of its origin.
