Behind the Bev: Ceremonial Matcha - Whisked to Order

Most matcha lattes are a green milkshake in a trench coat. Ours is sifted, whisked by hand in a glass bowl, at 70°C, one cup at a time.

Ceremonial matcha, hot or iced, whisked to order at our café in Moffat Beach on the Sunshine Coast.

THE CUP

Bright green, mellow, and a little toasty on the nose. Then the sweetness arrives, followed by a grassy, savoury, umami finish that sneaks up on you like it's been rehearsing.

Iced, the aroma sticks around instead of vanishing into the ice. Hot, it's round and gentle, the kind of cup that makes a Monday behave.

BEHIND THE MATCHA

We use Maison Koko's ceremonial latte blend, grown on a boutique farm in Uji, Kyoto, one of Japan's most celebrated tea regions. The plants are shade-grown, which is where matcha gets that deep green colour and its natural sweetness. It's a ceremonial-grade blend built to hold its flavour in milk, hot or iced, without turning bitter or going missing.

Properly prepared ceremonial matcha is still hard to find on the Sunshine Coast. So we figured we'd make it easy to find: Allen St, Moffat Beach.

HOW WE MAKE IT

Every cup is made to order:

  1. Sift the matcha through the Maison Koko sifter, so there are no lumps.

  2. Glass bowl, so you can see the colour come alive.

  3. 70°C filtered water, hot enough to wake it up, cool enough not to scorch it into bitterness.

  4. Bamboo whisk, until it's smooth and frothy (add honey or panela at this point).

  5. Milk of your choice, hot or poured over ice.

HOW TO DRINK IT

Hot or iced, your call. If you like it a touch sweeter, we offer raw local honey or organic panela. Both add a gentle, natural sweetness without drowning out the matcha, so it still tastes like matcha.

Feeling adventurous? Our signature Match-ube pairs the same ceremonial matcha with ube. Vanilla, earthy, creamy, grounded.
