Young Honduran producer Roger Antonio Domínguez Márquez is busy running the trio of midsize Marcala farms he inherited from his dad—family plots that have been around since the early ’90s, back when everyone was obsessed with grunge and dial-up internet. While natural-processed Honduran coffees are still the “new kids” on the specialty block, Roger is pushing the envelope with intentional anaerobic fermentation, sealing ripe cherries so they develop extra fruity brightness and a fuller body. The result? A flavor profile with real personality, shaped by a producer who’s not afraid to experiment.
